Preservative potassium sorbate (Potassium Sorbate, potassium salt of sorbic acid, E-202) is a food additive used for preserving fruits, vegetables, confectionery, meat, fish, juices, and soft drinks. The maximum permissible concentration of E-202 in products should be no more than 0.2%. It has a pronounced antimicrobial effect and is completely safe for the human body.
